Bacon Bean Collard Greens
If you do a little prep ahead of time this is a super-fast,
comfort food lunch or dinner if you’re following the Bright Line Eating weight
loss plan.
Ingredients:
- 1 bag (10oz) frozen collard greens (brand I use is Earthbound Farms organic)
- 2oz chopped onion (yellow, white or green)
- 4oz beans like cannelli, black, pinto or black-eyed peas
- 2 slices thick-cut bacon
- Condiments: Tobasco or other hot sauce, salt, pepper, garlic powder
Directions:
Trim as much fat as you can from the bacon and cut into
small pieces; generally the weight of the meaty pieces weighs 1.5oz. Fry in a skillet until it begins to crisp up;
because you’ve trimmed much of the fat off the bacon it can burn easily so I
recommend medium heat.
Stir in chopped
onion and continue cooking 2-3 minutes until it’s translucent.
Add frozen collard greens on top; cover
skillet. Cook for 3-5 minutes until collards are no longer frozen, stir, and
re-cover to cook for another 3-4 minutes.
Add the condiments and beans; fold in. I generally use 1tsp hot sauce and 1/8th tsp garlic powder along with liberal pepper and a little salt.
Continue cooking uncovered but
continue stirring every minute or so; cook until mixture is well heated and all
liquid (from the collards) has been evaporated.
Serve hot or warm.
